Warm Up With Sweet Potato Chili

As it cools down outside, you may be looking for something to warm up your insides.  Enter: Sweet Potato Chili with black beans! Yummmm!!

As with any good chili, this one is better when it's spicier, so be generous with the chili powder and cayenne pepper... but, not too generous.  You want to be able to eat more than one bite!

So, throw on a movie and grab your favorite blanket to cozy up in and whip up a batch of this super soul-warmer! (I don't have pictures of this one, so you're just going to have to make it and see for yourself how mouthwatering it really is)

Sweet Potato Chili with Black Beans


Ingredients: 
2 cloves of garlic, minced
1 small onion, diced
2 small sweet potatoes, peeled and chopped
2 medium carrots, sliced
1/2 of a red bell pepper, chopped
1 tbsp olive oil
1 15 oz can of black beans
1 15 oz can of diced tomatoes
1/2 to 1 cup of vegetable broth
1 tbsp chili powder
1 tsp cumin
1/2 tsp cayenne (or to taste)
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper ( or to taste)

In a large pot, saute the onions and garlic for a minute or two and then add the sweet potatoes, carrots and bell pepper.  Cook until onions are soft; about 5-6 minutes.

Reduce heat to medium low, add the remaining ingredients and mix well.  Simmer partially covered and stirring occasionally for 20-25 minutes or until all vegetables are thoroughly cooked.
